Homemade Rich Demerara Simple Syrup

Our latest book, Explorations of Rum makes good use of Rich Demerara Simple Syrup so we wanted to give your our own recipes if you’re not looking to purchase a product like B.G. Reynolds Rich Demerara. The premise of a rock candy syrup is the same, you want a 2:1 ratio of sugar to water. However, the sugar in this case, will be a demerara / turbinado sugar as the sweetener of choice. You may also find this sugar called “raw” sugar, such as the brand Sugar in the Raw.

Ingredients

  • 1 cup (8 oz.) demerara or turbinado sugar.
  • 1/2 cup (4 oz.) water

Instructions

Combine sugar and water in a pot and stir to integrate the sugar into the water. Bring water and sugar mix to a boil continuing to stir occasionally. Once the sugar clears and creates a tinted brown liquid, take the sugar off the heat and let cool. Pour into a clean glass bottle and begin crafting some great cocktails.

Storage

Store your new rich simple syrup in the refrigerator with an estimated lifetime of about six months. To extend the life of your rich demerara syrup, add 1/2 oz. vodka to the sugar syrup and get more than six months of life to it (but we suggest you just make more cocktails!)
